1 lb. Shrimp (peeled/deveined and rinsed)
Vegetable Oil (for deep frying)
8th WONDER FIRECRACKER SAUCE:
½ cup Mayonnaise
1 Tbs. 8th Wonder Spice Blend
1 Tbs. Sriracha Sauce
1 tsp. Sugar
1 tsp. Rice Vinegar
2 Eggs (beaten)
1 cup Milk
1 cup Panko Bread Crumbs
1/4 cup All-purpose Flour
1 tsp. 8th Wonder Spice Blend
1 tsp. Salt
1/4 tsp. Dried Basil
You will need 3 mixing bowls. In the first bowl, combine each of the sauce ingredients, then cover and set aside.
In the second bowl, whisk 2 eggs with one cup milk.
In the third bowl, mix the breading ingredients.
The shrimp will need to be double breaded in order to achieve a perfect crispy consistency when fried. For the first coat, toss shrimp in bowl of breading mixture. Transfer to the bowl with the egg mixture to coat, then return back to the breading bowl.
Arrange breaded shrimp on a plate, cover, and then let them rest in the refrigerator for 20-25 minutes. (This step is important for ensuring that the breading binds to the shrimp prior to the frying process.)
Meanwhile, fill deep fryer with the appropriate amount of vegetable oil, and preheat to 350F.
After breaded shrimp have rested in refrigerator, cook shrimp in the deep fryer for about 2-3 minutes, or until a crispy golden brown.
Remove from fryer and place on a paper towel lined plate to absorb excess oil, for about 1 minute.
Transfer shrimp to the mixing bowl with the 8th Wonder Firecracker Sauce. Stir gently until fully coated. Place 8th Wonder Firecracker Shrimp on a serving dish, and watch how quickly this delicious masterpiece disappears! ENJOY!
