8th Wonder Pulled Pork or Chicken Tostadas

Warmer weather means more outdoor entertaining. Keep it simple (but delicious!) with these tostadas. Create a fun "tostada bar" with the prepared ingredients in bowls, allowing guests to assemble their own culinary masterpiece.

Tostada Bar Ingredients

INGREDIENTS

  • 16 oz. Pork or Chicken (cooked, shredded)

  • 8 Corn Tostadas

  • 14 oz. can of Diced Tomatoes (fire-roasted flavor tastes best!)

  • 2 Onions (medium sized, thinly sliced)

  • 2 cups Cabbage (thinly sliced)

  • 2 Limes (one sliced, one juiced)

  • 1 Avocado (chopped)

  • 2 Tbs. 8th Wonder Spice Blend

  • 1 Tbs. Salt

  • 1/2 cup fresh Cilantro Leaves

  • 1 cup Sour Cream (divided)

  • 1 cup Shredded Taco Blend Cheese

INSTRUCTIONS

  1. In a blender, puree canned tomatoes, 8th Wonder Spice Blend, and salt.

  2. Transfer tomato sauce blend to a large pan. Add onions and cook until caramelized. Next, combine the shredded pork/chicken, stirring regularly for about 10 minutes. Note: If the sauce gets too thick, add in some water to rehydrate.

  3. Meanwhile, create a coleslaw blend in a mixing bowl by combining shredded cabbage with 1/2 cup of sour cream, a dash of 8th Wonder Spice Blend, and the juice of 1 lime.

  4. Warm corn tostadas according to their package instructions.

  5. Top tostada with seasoned pork/chicken, coleslaw mix, a dollop of sour cream, sprinkle of cheese, and chopped avocado.

  6. Serve with a lime slice and cilantro. Enjoy!
