Ingredients - Keto Blackened Chicken Wraps

INGREDIENTS

  • 5 large Boneless Chicken Breasts (halved)

  • 1/4 cup 8th Wonder Spice Blend

  • 1 cup Mayonnaise

  • 1/2 cup of Yellow Mustard

  • 3 Tbs Hot Sauce

  • 1 cup Celery (chopped)

  • 1 cup Red Onion (diced)

  • 2 cups Red/Yellow Bell Peppers (chopped)

  • 6 Eggs (hard boiled, chopped)

  • 1/2 cup Cilantro (chopped)

  • 2 heads Romaine Lettuce (for wraps)

INSTRUCTIONS

  1. Halve chicken breasts length-wise. Season chicken breast with 1/8th cup of the 8th Wonder Spice Blend.

  2. Put chicken in oven/grill at 300 F until internal temperature reaches 175 F. Let meat rest for 30 minutes before cubing into bite sized portions.

  3. Put cubed chicken breast in a large mixing bowl or platter, and shred until fibers are at a desirable size.

  4. Combine shredded chicken with remaining 8th Wonder Spice Blend and wet ingredients (mayonnaise, mustard, hot sauce).

  5. Add chopped vegetables (celery, red onion, bell peppers) and mix thoroughly.

  6. Fold in hard boiled eggs and cilantro. Mix until combination looks even and colorful.

  7. Serve blackened chicken salad on romaine lettuce, as a Keto wrap alternative. (Or opt for toasted corn tortillas if this better suites you.) Enjoy!
