8th Wonder Smoked Country-Style Ribs with Tangy BBQ Sauce

INGREDIENTS: COUNTRY-STYLE RIBS

  • 3-4 lbs. Country Style Pork Ribs​

  • 4 Tbs. 8th Wonder Spice Blend

  • 1 cup Yellow Mustard

INGREDIENTS: 8th WONDER TANGY BBQ SAUCE

  • 1/2 cup Apple Cider Vinegar​

  • 1 cup Ketchup

  • 1/4 cup Honey

  • 1/8 cup Lemon Juice

  • 2 Tbs. 8th Wonder Spice Blend

  • 1 Tbs. Dry Mustard

INSTRUCTIONS

  1. To make 8th Wonder Tangy BBQ Sauce: Add ketchup, honey, and 8th Wonder Spice Blend into a bowl, and stir for 1 minute. Gradually add in lemon juice and vinegar while stirring. Once at a desired consistency, set aside until ready to baste on ribs.

  2. Preheat pellet grill or smoker to 250 F (make sure to add a small bowl of water).

  3. To prepare the country-style pork ribs: clean, rinse, and pat dry your meat. Apply yellow mustard thoroughly over all surface area of ribs. Generously apply 8th Wonder Spice Blend until entirely coated on all sides.

  4. Cover meat and let rest at room temperature for 30 minutes.

  5. Place ribs in grill/smoker over indirect heat (opposite side of main heat source).

  6. Let meat smoke until internal temperature reaches 140-150 F. Ideally, ribs should achieve a golden/dark mahogany color.

  7. Remove ribs from smoker/grill, apply 8th Wonder Tangy BBQ Sauce to all sides of meat, and place in a foil-covered glass container. Put the container back into the smoker/grill to cook until internal temperature reaches 198-200 F (it should be tender with no resistance when probing meat).

  8. Remove ribs from container, and return directly onto the smoker/grill. Rotate meat every 15 minutes, applying additional 8th Wonder Tangy BBQ Sauce to the exposed sides, until external bark has reached desired color and crust hardness.

  9. Remove meat from the smoker/grill. Let meat rest for 30 minutes before serving. ENJOY!
